I wanted to make lunch for her today, so I did a little research and found a couple of yummy looking dishes on the internet.
This is Minestrone with Sun Dried Tomatoes and White Beans. I found the recipe at Vegetarian Times.
Lots of nice crispy veggies, garlic, onion and seasonings. We topped this soup with some parmesan cheese and it was dee-lish!!! I will make it again. I may try diced tomatoes rather than sun dried tomatoes next time.
I found a recipe for Mama's Best Broiled Tomato Sandwich at allrecipes.com. I used light mayo rather than regular in this recipe. Didn't matter, these too were dee-lish!!! Here they are before broiling.
Here they are after broiling!!!! Terry, Sherry and I all agreed that they were delicious!!!! I will make them again!

That soup looks so yummy! If I liked tomatoes the sandwiches would too, but mmmmmmmmm... not a fan. That was so sweet of you to do that for your friend. You're the sweetest! Sorry didn't get to correspond much this week, work is beyond hectic! Hugs, Julia

I sometimes entertain vegetarians & it is always a scramble to figure it out but everyone usually likes dinner weathher they are vegetarians or not :) I also like to toast bread & put it under the broiler with sliced romas, fresh basil leaves, & fresh mozzerella...a little olive oil on the bread & a shake of salt....YUM! Nowv I just need the basil to get growing! Your sandwhiches just reminded me of those--- thanks! :)
